Welcome to BakeFree. You can call me Mel, and I'm BakeFree's recipe developer and author. I'm delighted that you're here!

By profession, I'm a pastry chef and product developer for cafes, restaurants and bakeries. I have been working in the industry for the last 12 years. Currently based in Helsinki, but have done various consulting jobs in Paris, Barcelona and other European cities.

In 2016, I had to give up dairy and wheat from my diet due to gastrointestinal issues caused by lactose and gluten. As a pastry chef who loves to bake, making gluten-free and dairy-free bakery products with similar tastes and textures as the "conventional ones" takes a lot of work. 

Recently, with the help of new ingredients and years of experimentation, I developed good quality allergens-free bread and cake recipes that I'll happily share with you here.
