This gluten free bread recipe uses Caputo gluten free flour made with gluten-free wheat starch to give baked goods, particularly bread, incredible taste and texture.

Shaping the dough
Ingredients You'll Need
100 g Caputo GF Flour
2 g instant dry yeast
200 g lukewarm water
400 g Caputo GF Flour
8 g salt
10 g sugar
10 g instant dry yeast
200 g lukewarm water
15 g olive oil
Extra gluten free flour for shaping the dough
Special Equipment Needed:
To make the starter: Mix the yeast, flour, and water in a mixing bowl until combined; some tiny lumps of flour are okay. Cover and set aside at room temperature for at least 2 to 5 hours. You may allow the starter to ferment for up to 24 hours.
To make the dough: Dissolve the yeast with water. Mix all the dough dry ingredients in a large mixing bowl. Add in the yeast mixture. Use a wooden or rubber spatula to mix the dough. You may also use your oil-coated hands to prevent dough from sticking.
Add the starter, and continue mixing until the sticky dough comes together, about 2 minutes. Transfer to another bowl, cover, and set aside for 20 minutes. The dough will begin to rise slightly during this time.
Transfer the rested dough to a working surface dusted with flour. Press and fold to form an oval-shaped dough. Please watch the video.
Transfer the dough to a prepared oval-shaped parchment paper. Cover the dough with a damp cloth. Let the dough rest for 30 minutes at room temperature.
Preheat the oven to 428°F/220°C. Grease the Dutch oven with oil. Place the risen dough inside, sprinkle a thin layer of flour, then score using a blade or sharp knife.
Bake for 25 minutes with the lid on. Remove the cover and continue baking for another 25 minutes or more until the crust turns golden brown.
Transfer the bread to a wire rack and let it cool for at least 30 minutes before cutting.
