How to make the flan tart without gluten, dairy & eggs

Here's how:

  1. To replace eggs in the custard filling, you can use a combination of cornstarch and plant-based milk, such as almond or coconut milk. This mixture will thicken during baking and create a custard-like texture. Be sure to adjust the sweetness and flavorings accordingly to match your preference.

  2. To make the tart crust gluten-free, substitute the regular wheat flour with a gluten-free flour blend. You can find pre-made mixes in most grocery stores or make your own using a combination of gluten-free flour like rice flour, almond flour, xanthan gum, and tapioca flour. Alternatively, you can use gluten-free graham cracker crumbs or ground nuts mixed with butter as the crust base.

Just Egg Vanilla French Flan Tart: Just Egg is a versatile replacement with the same functionality as the real Egg. If Just Egg is unavailable and you're not vegan and allergic to eggs, use the same recipe with an equal amount of eggs.

Ingredients You'll Need

Instructions:

  1. Warm the plant milk to 140°F (60°C) in a pan.

  2. Mix the Just Egg, cornstarch, vanilla powder/seeded vanilla pod, and sugar in a mixing bowl. Gradually add half of the warm milk while whisking until well combined.

  3. Gently pour the custard mixture into the remaining warm milk in the pan.

  4. Cook on medium heat while continuously stirring until the custard is thick. Then remove from heat.

  5. Sieve the custard into a bowl. Cover the surface with cling film, then store in the fridge for at least 2 hours. This can also be done a day before.

  6. Preheat the oven to 350°F (175°C).

  7. Loosen the cold custard with a whisk and pour into the prepared gluten free pie tart crust - 18 cm diameter, 4 cm deep tart metal ring.

  8. Bake for 30 to 40 minutes until the crust is golden brown. The custard should still be wobbling when you shake it.

  9. Let the custard tart cool at room temperature for an hour. Brush with clear fruit tart glaze.

  10. Refrigerate for an hour, then serve.


Vegan and Gluten Free Vanilla French Flan Tart: For those who need a vegan and gluten-free version of this delicious dessert, here's a modified recipe using the vegan custard cream as the filling.

  1. Prepare in advance and follow the instructions for making vegan pastry cream.

  2. Preheat the oven to 350°F (175°C).

  3. Loosen the cold custard with a whisk and pour into the prepared gluten free pie tart crust - 18 cm diameter, 4 cm deep tart metal ring.

  4. Bake for 30 to 40 minutes until the crust is golden brown. The custard should still be wobbling when you shake it.

  5. Let the custard tart cool at room temperature for an hour. Brush with clear fruit tart glaze.

  6. Refrigerate for an hour, then serve.
