Unlike any other chocolate mousse cake, this vegan triple mousse cake recipe has no added sugar, has a gluten free sponge cake trimmings base, and no gelatin or eggs added.


The chocolates and cream used in this triple chocolate mousse cake are dairy free, vegan, and free from gluten.

Easy 3-Layer Vegan Chocolate Mousse Cake


This triple chocolate mousse recipe is the dream of every chocolate lover. The eggless chocolate mousse cake only requires three types of dairy free chocolates(dark, milk, and white) and plant-based cream, that's it!

No baking and no difficult techniques, just three layers of silky and creamy mousse; dark chocolate, milk chocolate, and white chocolate.


In the video, I made a triple chocolate mousse in a glass. It is a perfect dessert for parties and if you don't have the mini cake rings available. They both have the same luxurious, creamy taste.

Ingredients You'll Need


Dark Chocolate Mousse

  • 110g (4oz) Dark chocolate

  • 75 g Heavy cream

  • 75 g Heavy cream, whipped

Milk Chocolate Mousse

  • 140g (5oz) Vegan Milk chocolate

  • 75 g Heavy cream

  • 75 g Heavy cream, whipped

White Chocolate Mousse

  • 160g (5.6 oz) Vegan White chocolate

  • 75 g Heavy cream

  • 75 g Heavy cream, whipped


Total dairy free heavy cream: 450 g


Note:

For the base of the cake, you may use crushed vegan, gluten free biscuits like graham and digestive or left-over sponge cake trimmings. Mix them with melted dairy free butter, then press at the bottom of the cake before adding the mousses on top.


Decorate the cake with cacao powder and edible flower on top. Top the glass dessert version with crushed graham, cacao nibs or fresh berries.



Instructions:


  1. To speed up the process, whip half of the vegan heavy cream (225 g) at once to soft-medium peaks, then divide it into three equal parts. Divide the remaining heavy cream into three (75 g) to be added to the chocolate later.

  2. Chop and place each chocolate into small pieces in separate bowls. To each bowl, add heavy cream.

  3. Melt each chocolate (one at a time) over a double boiler. Then set aside covered with cling film.

  4. Start with the dark chocolate mousse: Mix the whipped cream into the melted chocolate while still warm. Fold instead of stirring not to deflate the foam. The mousse must be well combined, and no streaks remain.

  5. Transfer the mousse to a piping bag. Pipe the first mousse into the prepared mini cake ring molds lined with acetate cake strips. Refrigerate for 10-15 minutes. Follow the same steps using a glass instead of a cake ring mold.

  6. Then pipe the second mousse - milk chocolate layer on top of the dark chocolate mousse, and refrigerate for 10-15 minutes.

  7. Repeat the process with the third mousse - white chocolate and refrigerate for at least an hour. For the mousse cake in the rings, you may freeze it for an hour or two to avoid damaging the mousse cake when removing the metal cake rings.
